Whos ready to Coupon??

I cant even believe it has been so long since I have used a coupon.  I must have been on burn out from life, exhaustion from very active kiddos and overfill of my house.. BUT my stockpile just gave me 3 months of no shopping, and I mean that, no laundry, no toilet paper, no personal care items, just food.  Dont get me wrong we still have plenty, but my favorites are gone.

I didn't realize how much a part of me it was. Its funny how friends and family ask, Well what do you do? Where are you?  Are you shopping?  What are the Deals this week?  These last months I have devoted to my extended family, I need to find myself again and couponing apparently is me :)  Sunday I'm getting my papers.  How could I make those HUGE Christmas baskets with out my coupons?  I cant disappoint can I? 58 days.. its GO TIME!

How cute are these little guys? My grandmom in law helps us all of the time.. Babysitting, cleaning, organizing.. Whatever we need with out even asking she is here. She owns The Eagles Nest Deli. How can you thank someone when thank you isnt enough? I found these online. So easy, no baking!!

Marshmellow
White Chocolate
Coconut
Cashew
Black Icing

Just melt chocolate in microwave, dip marshmellow in it, roll in coconut, set onto of an oreo. Wait a few minutes for it to set. Use toothpick to make small hole, dip cashew tip in chocolate and insert. Make little eyes. Finished!!

Homemade Cake

The last attempt at homemade cake was a mess, who would think you had to use cake flour, and what is it by the way?? Lol .. I found it yesterday at the store. I made the recipe on the box.

It says get the sugar and melted butter fluffy, this took awhile and i was not quite sure what fluffy was, but after a few minutes it did turn fluffy :)

Mix wet and dry.

Bake for 19 minutes, i made 3 small square cakes..
Then i made homemade whipped cream.. My 1 year old was in heaven!

Topped with a store bought strawberry glaze.

We would never eat a 13x9, so this works perfect. 2 for the freezer!

Banana banana bread

We didnt get to the Farmers Market, AJ caught a stomach bug and cant leave the house.. So I used up what we did have on hand.. Like over ripe banana's.  I would have tossed these before, but If I can master the bread in the oven maybe my bread machine will become less of an obsticle for me!

Just threw these in my food processor along with the other ingrediants and Look at this beautiful bread!! Im not kidding ~ This never happens.. Somehow my oven makes mostly NON EDIBLE treats!  (Not me of course)

The only thing its missing is Blueberries like my Gram's.. Although I am sure mine will never taste like her's this is coming in close!
You can find the Banana Banana Bread Recipe HERE

Cooking from my stockpile ~ Applesauce Cookies

Friday I was able to get a few jars of applesauce at a great price from Rite Aid.  So I googled recipes.. I found this awesome cookie recipe HERE. We loved them, including my puppies!

I modified it a little, 1tsp of vanilla and left out the walnuts and rasins so my little man can eat them!

They are light and crunchy.. Perfection!!  I left out a dozen for us to eat now..
and in 2 weeks I will have a dozen more from the freezer!

Freezing eggs

I love eggs. Scrammbled, deviled, macaroni salad, in brownies of course..

They expire quickly, apparently you can freeze them for up to 9 months!

First i followed the web sites instructions and used an icecube tray. - Fail - they dont fit..

So i got a kids cup and a sandwich bag... Cracked the egg, removed the air..zipped it closed.

One dozen eggs.. Bought today at riteaid. (pretty much free because of using my rewards)
All you have to do is take it out the day before and thaw in the fridge. !

~ Scatter Brain ~ Yes thats me..

I love using coupons and getting the deals.. It is alot of work and if I told you it wasn't I would be lying.. Many hours I would spend matching coupons searching forums ext.  It seems I do it for 2 weeks and get burnt out.. But Here is the great thing about it.. MY STOCKPILE.  I dont need to get anything because I already have it.  The downfall.. when I dont shop, I dont post.  During the other 2 weeks of the month I am cleaning, playing with my kiddos, crafting and rearranging my house to get it JUST SO!! I am a scatter brain and involve my hubs in many projects he does *NOT* want to participate in! But does so because he loves me :)  The insanity at times can be endless, and im not kidding.. painting, constructing.. But what I have never done much of is Cook.. well out of my realm of safety foods that my mom, grandmom's and aunt's cooked.  I have perfected their recipes.. but I haven't built my own..

I rarely use coupons on food.. We just dont eat most of it.. Cereal and frozen vegetables are about it, rendering much of the food coupons useless in my home.  I have a bread machine, im scared of it.. I have an oven to bake in.. and seriously if my cakes didnt look like *Hiroshima* as hubs call them I would use it more. Besides the fact I HATE THE MOUNTAIN OF DISHES IN MY SINK.. If you have been to my house, you know my sink along with my cabinets is well stocked!

What I did love this month was the ability to pull dinners/lunches from the freezer that were homemade, and just throw them in the oven!  I felt good knowing my hubs took them to work saving us alot of money too.. so what I need to do is make homemade food more available in my house!!

July is here..I am ready for another freezer cooking day.  I am going to hit the farmers market this afternoon.. and get my veggies and fruit for the month.

This weekends plan..
Muffins
Fruit Rolls Ups (who know you can home make this!!)
Chopped Fruit for the freezer
Watermelon Popsicles (im sure my andrew will love this!!)
Blanching vegetables and freezing them.. (ha, I have to laugh, this will be a fiasco Im sure)
Potatoes for hash browns, mashed and twice baked and stuffed skins
Herbs and garlic (You can freeze them!)
Breads w fruit
Bagels
